The Duluth Forge Kamado Grill is made from ceramic which can produce very high temperatures when heated. These conditions make this grill an ideal one for creating a delicious pizza however, be sure to keep an eye on your pizza when cooking. If not careful, cooking at high temperatures could result in a burnt crust.

To start first you will want to let your dough warm up to at least room temperature, set your dough aside for 1 – 4 hours depending on how cold your dough is. By doing this your dough will become relaxed and easier to shape.

Once your dough has sat you can start up your grill. The ideal temperature for a pizza is 650 degrees Fahrenheit. A baking stone is preferred when using a Duluth Forge Kamado Grill to cook a pizza. The cooking stone helps distribute heat for the pizza to be cooked thoroughly. Place the cooking stone in the Duluth Forge Kamado Grill to heat up. While your grill is reaching the desired temperature, you should be prepping any toppings that will be used on your pizza.

Next you will need to shape your dough. Your goal should be about 10 – 12 inches in a circle which will typically get you about 8 – 10 slices per pizza. Utilizing flour during this step will help greatly when shaping the dough. This dough should now be soft enough that you are able to stretch it while its flat, if it is still hard you will need to wait longer for before stretching your dough. Do not try to pick up the dough because this may cause holes. Working with your flour, you can gently begin to poke the edge of the dough ball all around to form the crust. Be sure that your pizza crust is not to thin and the dough has been distributed evenly around the pizza. Once you are satisfied with your dough add any sauce and toppings that you would like.

Finally, you will want to open your grill and quickly brush any ash from the baking stone. Once brushed, quickly place the pizza on the baking stone and close the lid. Close the top vents to trap the heat at the top and keep the bottom vents open to help feed the fire. The pizza should cook evenly so there will be no need to rotate it. Cook the pizza until the rim is puffed and the bottom is crisped. Once your pizza is cooked you can remove the pizza and serve.
